Ingredients
  1. Black Bean Burger
  2. 1 (15-oz) can unsalted black beans, rinsed, drained (reserve liquid)
  3. ½ cup corn
  4. 1 egg
  5. ½ cup panko breadcrumbs
  6. ¼ cup red onion, chopped
  7. 2 garlic cloves, minced
  8. ¼ cup fresh cilantro, chopped
  9. 1 tablespoon original taco mix or
  10. (½ teaspoon paprika, ½ teaspoon cumin, ½ teaspoon crushed red pepper)
  11. ½ teaspoon kosher salt
  12. ¼ teaspoon ground black pepper
  13. olive oil
  14. Cilantro Mayo
  15. ½ cup mayonnaise
  16. 1 tablespoon fresh cilantro, chopped
  17. 1-teaspoon fresh limejuice
  18. 1-teaspoon olive oil
  19. Combine all ingredients and refrigerate until ready to use.
Instructions
  1. Black Bean Burger
  2. Place drained black beans and corn in large bowl. Add eggs, panko, onion, garlic, cilantro, paprika, cumin, crushed red pepper and salt & pepper and combine all ingredients. If mixture is dry, add reserved liquid 1 tablespoon at a time. Place bowl in freezer 10-15 minutes.
  3. Shape black bean mixture into patties. Refrigerate until ready to cook. Cook in olive oil 3-4 minutes on each side.
  4. Assemble patties with cilantro mayo guacamole and other toppings of choice. Enjoy
