Black Bean Burger // Cilantro Mayo

Ingredients
- Black Bean Burger
- 1 (15-oz) can unsalted black beans, rinsed, drained (reserve liquid)
- ½ cup corn
- 1 egg
- ½ cup panko breadcrumbs
- ¼ cup red onion, chopped
- 2 garlic cloves, minced
- ¼ cup fresh cilantro, chopped
- 1 tablespoon original taco mix or
- (½ teaspoon paprika, ½ teaspoon cumin, ½ teaspoon crushed red pepper)
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- olive oil
- Cilantro Mayo
- ½ cup mayonnaise
- 1 tablespoon fresh cilantro, chopped
- 1-teaspoon fresh limejuice
- 1-teaspoon olive oil
- Combine all ingredients and refrigerate until ready to use.
Instructions
- Black Bean Burger
- Place drained black beans and corn in large bowl. Add eggs, panko, onion, garlic, cilantro, paprika, cumin, crushed red pepper and salt & pepper and combine all ingredients. If mixture is dry, add reserved liquid 1 tablespoon at a time. Place bowl in freezer 10-15 minutes.
- Shape black bean mixture into patties. Refrigerate until ready to cook. Cook in olive oil 3-4 minutes on each side.
- Assemble patties with cilantro mayo guacamole and other toppings of choice. Enjoy
