Beef, Bean and Cheese Enchiladas

Yield: 4 Servings
Ingredients
- 2 tablespoons olive oil
- 1 lb ground beef
- 1 small red onion, chopped
- 1 clove garlic, minced
- 1-teaspoon cumin
- 1-teaspoon chili powder
- 1-teaspoon paprika
- 8 corn tortillas
- 1 can black beans (15.5 oz), drained
- 2 cans enchilada sauce (19 oz each) start with one can and have the 2nd one as a backup just in case you want your enchiladas a little saucier!)
- 2 1/2 cups shredded cheese (Monterey jack or cheddar)
Instructions
- Heat oil in large pan over medium heat. Add red onions and garlic and sauté 2-3 minutes. Add beef, cumin, chili powder, paprika, and 1/2 cup enchilada sauce. Cook 5-8 minutes
- Transfer mixture to large bowl and add beans.
- Wrap tortillas in paper towel and microwave 40 seconds.
- Coat bottom of 13x9 baking dish with 1-cup enchilada sauce. Put remaining sauce in shallow dish or large bowl. Carefully dip one tortilla at a time in enchilada sauce to lightly coat. Place tortillas on tray until ready to assemble. Sprinkle cheese and fill with beef & bean mixture. Fold tortillas and place seam side down over sauce in baking dish. Top with remaining sauce and cheese.
- Bake 20 minutes in 350-degree oven.
- Top with cilantro, tomatoes, chopped avocado, sour cream jalapeño and crumbly cotija cheese! Enjoy
