Beef, Bean and Cheese Enchiladas

  1. 2 tablespoons olive oil
  2. 1 lb ground beef
  3. 1 small red onion, chopped
  4. 1 clove garlic, minced
  5. 1-teaspoon cumin
  6. 1-teaspoon chili powder
  7. 1-teaspoon paprika
  8. 8 corn tortillas
  9. 1 can black beans (15.5 oz), drained
  10. 2 cans enchilada sauce (19 oz each) start with one can and have the 2nd one as a backup just in case you want your enchiladas a little saucier!)
  11. 2 1/2 cups shredded cheese (Monterey jack or cheddar)
  1. Heat oil in large pan over medium heat. Add red onions and garlic and sauté 2-3 minutes. Add beef, cumin, chili powder, paprika, and 1/2 cup enchilada sauce. Cook 5-8 minutes
  2. Transfer mixture to large bowl and add beans.
  3. Wrap tortillas in paper towel and microwave 40 seconds.
  4. Coat bottom of 13x9 baking dish with 1-cup enchilada sauce. Put remaining sauce in shallow dish or large bowl. Carefully dip one tortilla at a time in enchilada sauce to lightly coat. Place tortillas on tray until ready to assemble. Sprinkle cheese and fill with beef & bean mixture. Fold tortillas and place seam side down over sauce in baking dish. Top with remaining sauce and cheese.
  5. Bake 20 minutes in 350-degree oven.
  6. Top with cilantro, tomatoes, chopped avocado, sour cream jalapeño and crumbly cotija cheese! Enjoy
