Sticky Honey Pomegranate Chicken

Ingredients
  1. 2 tablespoons unsalted butter
  2. 8 bone-in, skin-on chicken thighs
  3. sea salt
  4. black pepper
  5. 1/2 teaspoon sesame seeds
  6. 2 green onions, thinly sliced
sauce
  1. 1/4 cup honey
  2. 1/4 cup soy sauce
  3. 2 tablespoons ketchup
  4. 2 cloves garlic, minced
  5. 1 tablespoon brown sugar, packed
  6. ¼ cup pomegranate juice
  7. 1 tablespoon freshly grated ginger
  8. 1 teaspoon Sriracha
  9. 1 teaspoon sesame oil
  10. 1 teaspoon cornstarch
  11. 1/4 teaspoon ground black pepper
  12. arils from 1 pomegranate
Instructions
  1. Preheat oven to 400 degrees F.
  2. Season chicken with salt and pepper.
  3. Whisk together honey, soy sauce, ketchup, garlic, brown sugar, pomegranate juice, ginger, sriracha, sesame oil, cornstarch and pepper in a small bowl; set aside.
  4. Melt butter in a large ovenproof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side. Stir in honey mixture.
  5. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes. Then broil for 2-3 minutes, or until caramelized and slightly charred.
  6. Garnish with sesame seeds, green onions and pomegranate arils.
