Pasta with Mushrooms

Ingredients
- 1 pound pasta
- 2 tablespoons olive oil
- 5 tablespoons butter
- 1/4 teaspoon salt
- 6 cups mushrooms, sliced
- 6-8 cloves garlic, minced
- 2-3 sprigs of fresh thyme
- ¼ cup dry sherry
- 2 tablespoons fresh parsley, chopped,
- Parmesan cheese, grated
- salt and pepper
Instructions
- In large sauté pan, melt 3 tablespoons of butter and olive oil. Cook mushrooms, garlic and thyme. Sauté 1-2 minutes, add sherry and continue to sauté 5-6 minutes. Discard thyme sprigs, season with salt and pepper.
- Bring a large pot of salted water to a rapid boil. Add pasta, cook per instructions on package. Drain, reserve 1-2 cups of pasta water.
- Combine pasta, remaining 3 tablespoons of butter, mushrooms with garlic, about ¾ cup of reserved pasta water and parmesan. Toss gently or until water reduces and thickens into a shiny sauce that coats the pasta. If the pasta dries out, add more pasta water.
- Sprinkle with black pepper {and salt if needeed}. Garnish with fresh parsley and parmesan cheese.
- Serve immediately. Enjoy!💟
