Cheesy Bacon Spinach Dip

Yield: 8-10 Servings
Ingredients
- 2 teaspoons butter, for baking dish
- ½ pound bacon, chopped
- 1 medium onion, diced
- 2 garlic cloves, minced
- 3 pounds spinach, stems removed
- ½ cup milk
- 6 ounces cream cheese
- 2-3 dashes Worcestershire sauce
- 2-3 dashes of hot sauce
- ¾ cup shredded mozzarella
- ¼ cup Parmesan
- salt and pepper
Instructions
- Preheat oven to 425 degrees.
- In a large pan cook bacon until crispy. Transfer bacon to paper towel lined plate and reserve 2 tablespoons of bacon grease.
- Add onion and garlic; cook until lightly browned, 4-5 minutes.
- Add spinach in batches and sauté until all the greens are wilted. Transfer Spinach to strainer and drain. Place back in pan and add milk, cream cheese, Worcestershire sauce, hot sauce, ¼ cup mozzarella and half of the cooked bacon; stir to combine. Season with salt and pepper. Pour into buttered dish; sprinkle with remaining 1/2 cup mozzarella and Parmesan.
- Bake until bubbly and golden brown, 20 to 25 minutes. Top with remaining bacon. Enjoy!
- ***I always add a little bit of other cheeses I may have at home (manchego, fontina, gruyere...) just for extra flavor!
